Herbed Chicken over Balsamic Roasted Vegetables

Preheat oven to 300F.  Place balsamic vegetables, chicken, and rice into oven and heat for 10 minutes, or until warm.

Serve vegetables and chicken breast over rice and dress arugula with your favorite dressing!

My suggestion is to squeeze juice of 1 or 2 lemons, fresh cracked pepper, dash of salt, and drizzle of olive oil.
